A great salad for those looking for a different type of salad.
Prep Time: 20 min
Dish Type: Salad
1 cup Water
3/4 cup Couscous, uncooked
1 bunch Fresh asparagus - 2
1/2 cup Green or Red Peppers, chopped
1/2 cup Cheery Tomatoes, halved
1/4 cup Feta cheese
2 tbsp Extra virgin olive oil
1 1/2 tbsp Lemon Juice
1 tsp Dried Oregano
1/4 tsp Salt
In suacepan, bring water to a boil & stir in couscous
Remove from heat and let stand for 5 min.
Fluff and let cool for 10 min.
Blanch the asparagus in a large pot of boiling water until bright green (2-5 min)
Remove with slotted spoon and place in a large bowl of ice water.
Remove from water and dry.
In a small bowl, whisk dressing ingredients.
In a large bowl, combine all ingredients and mix well.
Cover and refrigerate.
